Early each spring as the winter snowpack melts and the blush of new life begins
to show in the Vermont countryside, sugaring time starts
at the Robb Family Farm sugarhouse.
Alternating warm days and cool nights
cause the maple sap to run for a brief three to four week window before the
maple trees start to bud. Using the farm tractor Charlie Jr. collects the maple sap from the sap buckets hung
throughout the sugargrove. The sap is brought to the sugarhouse where it is then
slowly boiled down the traditional way, with a wood-fired arch.
Maple syrup from the Robb Farm is the perfect complement
to pancakes, waffles, French toast, vanilla ice cream, or
even coffee. Or, use the syrup to prepare any number of
maple syrup recipes easily found on the web from breads and
main dishes to cakes, cookies, and pies.
